A challenge for me in meal planning has been to “ ease ” my family’s health and mine. My husband and I were raised on “meat and potatoes,” so it has been a difficult change. But we are progressing gradually.

One way to lighten up is by substituting ground turkey for ground beef. For us this is a huge difference in taste and it is hard to get used to when we are used to the taste of ground beef. However, I have found recipes made especially for ground turkey and they are much better. The ‘Turkey Medallions with Orange Teriyaki Sauce’ recipe below is one such recipe. It is delicious and is almost a complete meal on its own with the meat and vegetables.

But to round out the meal and make it more filling, serve it with “Hawaiian bread” (recipe below) or thickly sliced ​​French bread from the local bakery that’s been warmed up in the oven. If you’re trying to lighten up, skip the butter (if you have any).
