Sonic & Sega All-Stars Racing is a kart racing game. It has the same gameplay as other games in its genre, such as Mario Kart and Konami Krazy Racers. In the game, players will compete in different race tracks themed around various Sega franchises. As you race along the circuit track, you will have the opportunity to collect power-ups that can significantly increase your speed. Boosts can also be used to block opponents. Players can earn more power-ups through drifting or performing tricks in the air. There are four types of vehicles used on the racing circuits, including racers, off-roaders, bikes, and hovercrafts. Due to the terrain on the race circuits, vehicles will be assisted or hindered by the surfaces they are driving on. For example, racing vehicles can perform well on hard surfaces, but are hampered by soft terrain such as mud and snow. As you progress through the game, you will be able to earn Sega Miles that can be used to unlock additional features in the game, including characters and tracks. Sonic & Sega All-Stars Racing has twenty-four race tracks that are based on locations from different games like Sonic Heroes, Super Monkey Ball, and Samba de Amigo.

The background music played throughout the game is derived from tracks old and new from the Sonic video game franchises. However, the game also has original songs by various artists, including Richard Jacques. At first, the course only has one track. As you earn Sega Miles, more tracks will unlock. MIDI tracks on the Nintendo DS platform are composed by Allister Brimble and Anthony Putson of Orchestral Media Development. The theme song for Sonic & Sega All-Stars Racing is So Much More…, originally sung by Bethley Jones.

At the beginning of the game, players will be able to choose between 8 different players, including Sonic the Hedgehog, Amy Rose, AiAi, Amigo, Bill Hatcher, Miles, Dr. Robotnik, and Shadow the Hedgehog. Other characters can be unlocked through Sega Miles.
