Citrus Chilli Pork with Cashew Recipe

2 tablespoons of oil
12 oz. (375 g) pork tenderloin, thinly sliced
2 small red chilies, seeded and finely chopped
6 spring onions, chopped
1 tablespoon mild curry paste
2 tablespoons of fish sauce
1-2 tablespoons lime juice
2 teaspoons of crushed palm sugar
2 teaspoons of cornmeal
1/2 -1 teaspoon seasoning sauce
1/3 cup (13/4 oz./50 g) unsalted roasted cashews
lime zest, to decorate

Instructions for Citrus Chili Pork with Cashews Recipe:

1. When you want to cook the Chili Cashew Pork Recipe, start by heating the wok until very hot, add the oil and toss to coat the sides. Saute pork slices, chili, and spring onion in batches on high heat for 2 minutes, or until pork changes color. Add the curry paste and saute for 1 minute. Remove from wok and reserve.

2. Combine fish sauce, lime juice, sugar, and cornmeal with 1/2 cup (4 fl oz/125 ml) of water. Pour into wok and stir 1 minute, or until heated through and thickened slightly. Return meat to wok and stir until heated through.

3. Add seasoning sauce, to taste, and cashews. Cover with the lime skin.
